A RECIPE: PEACH SALSA

today, i had an afternoon free and took full advantage to make peach salsa! we live down the street from tacocracy, this little taco bar that has the absolute best peach salsa you have ever tried (and their pineapple salsa is to die for, too) i love how simple and pretty their salsa is and tried my best to look up a recipe online that looked at least similar to theirs. how technical is that? looking for the same color scheme is salsa? yikes. anyways, i didn't really see any that looked "easy" enough, so i kind of tweeked a few things. this stuff took about 10 minutes (all of that time was spent chopping... and crying from onions... and hospitalizing a pretty deep knife wound) 
you'll need: 
-3 ripe peaches
-1 lemon
1/2 cup roasted red pepper
1/2 minced jalapeño 
-1 red onion
-a fraction of the cilantro that you'll have to buy
-a teeny weeny bit of salt 
peel and slice the peaches. eat pieces as you go because... it's fresh peaches. 
but at least save 1 1/2 cups worth for the salsa. 
chop up a tablespoon worth of red onion. and cry your freaking eyes out. 
i have a theory that when chipotle goes to buy their cilantro, they probably buy less than we do. why do we buy so much, i have no idea. you'll need ONE teaspoon. 
and one tablespoon of lemon juice. 
grind about a 1/2 teaspoon of sea salt on there for good measure. 
 throw it in the fridge for a few hours so it can sit and marinate in itself. freaking delicious.
