A recipe: Cast Iron Peach Crumble


rest assured in a life filled with uncertainty, like whether or not i like having bangs or where in the world i should live, i will always be a dessert person no matter what. i don't care that it's 2 million degrees outside and the whole world is in string bikinis. you can wheel that dessert cart right in front of me, thanks, and i'll have my fork ready. today was a rainy, muggy, grossssss day here in ohio and what better way to waste away a wednesday than to bake? i found this cast iron recipe online and this thing turned out better than i could have hoped for. i can't stop dipping my fork into it every time i walk into the kitchen. it's super easy too! you should make it, too. here ya go:

for the crumb topping:
1 cup all purpose flour
2/3 cup light brown sugar (packed)
1/2 teaspoon salt
1 stick of butter, cup in slices

for the peach filling:
1/4 stick butter (this is just to grease your pan)
2 1/2 pounds of peaches (or 3 cans, if you're gettin' thrifty)
1/3 cup light brown sugar (packed)
1/4 cup sugar
juice from one large lemon
1/2 teaspoon garam marsala
1/2 teaspoon salt

preheat your oven to 350

crumb prep:
mix your flour, sugar, salt and butter in a bowl. it will be crumb-like and kind of difficult to deal with. that means you're doing it right. i put mine in my kitchen aid and it kind of mixed it "too well" don't do that. use your hands!

filling prep:
mix all ingredients (except the butter)
use your butter to grease your pan. there will probably be extra, set it aside.

put your filling in your pan
put the topping over your filling
if you had extra butter left over, sprinkle it in in chunks on top of everything. because… it's butter.

throw it in your oven for 25 minutes
i like my desserts crispy, so i left in in the oven on the broil setting for 3 minutes to burn the top a little.

i served mine (serve … haha… who am i kidding? i'll be eating this alone with my dogs in front of the tv) with ice cream and blackberries. fruits help counteract the effects of the butter. fact.
